Serve these juicy caps with cocktails.
Ingredients:
Crimini mushrooms, stems removed - 15
Goat cheese - 1/2 cup
Salt - a pinch
Pepper powder - 1/4 tsp
Garlic powder - 1/4 tsp
Red chili powder - 1/4 tsp
Vegetable oil - 1 1/2 tbsp
Method:
- In a bowl, toss mushroom caps, salt, red chili powder and 1/2 tbsp oil.
- Heat a pan and add the remaining 1 tbsp oil.
- Place mushrooms on the pan one by one, stem side down. Leave for 1-2 minutes.
- Turn each one individually so as the stem side is up.
- Mix goat cheese, pepper and garlic powder in a bowl.
- Place about half a spoonful of this mixture in each mushroom cavity.
- Cook covered on a low flame for 2 minutes or till the cheese melts.
- Let stand for about a minute and serve.
Note: The cheese is already salty so add very little salt to the caps.
