Carrot Sabji











Ingredients:
Carrot - 2 cups, diced
Red chili - 1
Dry or fresh grated coconut - 1/2 cup
Curry Leaves - 4 to 5
Mustard seeds - 1/4 tsp
Oil - 2 tsp
Turmeric powder - pinch
Sugar - pinch
Salt - to taste

Method:

  • Heat oil and add mustard seeds and whole red chili.
  • Add curry leaves and diced carrot. Fry for a minute.
  • Add turmeric powder, grated coconut, salt and sugar and a little water.
  • Cook covered for 3-4 mins till all the water evaporates.
