Can be easily made with shrimp or chicken as well. You may also add 2 eggs.
Ingredients:
1 1/2 cup Jasmine rice
1/2 cup cabbage cubes
1/2 cup red bell pepper
1 cup mixed vegetables (carrot, zucchini, string beans etc.), cut into small pieces
1 cup baby spinach
2 tbsp - soy sauce
1 tbsp - white vinegar
2 red chilies
2 cloves garlic, chopped
Oil - 3 tbsp
Salt to taste
Pinch of sugar
1/2 cup - Shrimp or chicken (optional)
2 eggs - beaten (optional)
Method:
- Cook rice and allow to cool.
- Add oil to a pan and add red chilies and garlic.
- Optional - Add shrimp or chicken to the pan and a little salt
- Add mixed vegetables and stir for a minute.
- Add bell pepper and cabbage. Stir fir a minute and add in cooked rice.
- Add salt and stir for 1-2 minutes.
- Optional - Add eggs and stir for 2 minutes.
- Add soy sauce, white vinegar and sugar and stir. Add spinach and stir for another minute or 2.
