Spice Cookies

Great with a cup of tea or coffee.

Ingredients:
Flour - 1 1/2 cups
Unsalted Butter - 1 cup, cut into pieces
White sugar - 1 cup
Dry fruits & nuts (Almonds, Pitted Prunes, Pitted Dates, Raisins) - 1 1/4 cups
Egg - 1
Ground fresh ginger - 2 tsp
Spice powder (Nutmegs, Cloves, Black Pepper) - 1 1/2 tsp
Baking soda - 1 tsp
Salt - 1/2 tsp

Method:

  • Pre-heat oven to 450 degrees F.
  • Add nuts and fruits to a food processor and pulse for a few. Remove and keep aside.
  • Beat egg and sugar in a bowl.
  • Add 1 1/4th cup flour, salt, baking soda, ginger to food processor and pulse for a few.
  • Add in the butter and pulse 3-4 times.
  • Add the dry fruits and nuts mixture and pulse.
  • Finally add the egg and sugar mixture and pulse twice.
  • Remove the cookie mixture and knead lightly 10 times.
  • Use the remaining 1/4 cup flour if required to help form a soft dough.
  • Freeze the dough for 5 minutes.
  • Remove and make cookies or keep refrigerated till ready to bake.
  • When ready to bake, make small balls using about 1 tbsp of dough.
  • Place on a greased cookie sheet, 1 1/2 inches apart.
  • Use a fork to flatten the cookie dough and shape the cookie.
  • Bake till lightly brown - for about 8 to 10 minutes.
  • Transfer to a cooling rack and allow the cookies to cool off completely.
  • Store in a air tight container.
