Tilapia Mint Cakes




Serve with mint chutney as an appetizer
Or with dal and rice as a side dish
Or make a fish burger by adding the pattie in a bun with lettuce, tomatoes and onion.

Replace Tilapia filets with Paneer to make Paneer Mint Cakes.


Ingredients:
Tilapia filets - 1
Turmeric powder - 1/4 tsp
Chili powder - 1/4 tsp
Lemon juice - 1 tbsp

Onion - 1
Green chilies - 2
Ginger - 1 inch piece
Pepper powder - 1/8 tsp

Coriander powder - 1/4 tsp
Ajwain - 1/8 tsp
Gram flour - 2 tbsp
Semolina - 1 tbsp
Lemon zest - 1/4 tsp
Mint leaves - 1/2 cup
Salt - to taste

Oil for deep frying.


Method:
  • Take tilapia filets in a microwave safe dish and add turmeric powder, chili powder and lemon juice. Microwave on high for 2-3 mins.
  • In a food processor add onion, green chili and ginger and pulse about 3 times.
  • Add microwave cooked tilapia to the processor and pulse 3 to 4 times.
  • Add the rest of the ingredients except oil and pulse 2 times.
  • Take the minced mixture out from the processor onto a bowl and let rest for 15 mins.
  • Make small balls or cakes using the minced fish.
  • Heat oil in a pan and deep fry the cakes/balls on high heat till brown.
Tip: You can make cakes of 2-3 filets, deep fry them and allow them to cool down completely. Put the extra ones on a tray and freeze for 20 mins. Take these frozen cakes and store in freezer storage bag in the freezer for up to a month. Just reheat in the microwave and eat.
