Spinach and Red Bell Pepper Burji

Serve this dish hot. It tends to get lumpy and hard when cold.

Ingredients:
Oil - 2 tbsp
Cumin seeds - 1 tbsp
Spinach - 2 bunches, chopped (use stems as well)
Onion - 1, chopped finely
Red Bell pepper - 1, chopped finely
Green chili - 1, chopped finely
Salt to taste
Powders:-
Cumin powder - 1 tsp
Turmeric powder - 1/2 tsp
Red chili powder - 1 tsp

Gram flour (Besan) - 1 cup

Method:


  • Heat oil in a pan and add cumin seeds.
  • Add spinach and allow to wilt.
  • Add onion, red bell peppers and green chili.
  • Allow the onion and peppers to cook.
  • Add salt and the powders and stir for 2 minutes.
  • Take the gram flour in a cup and add a little water to make a paste. Ensure that there are no lumps.
  • Add this paste to the spinach and stir.
  • Keep stirring till all the liquid evaporates.

Serving Suggestions:

  • Serve burji with rotis.
  • Make a sandwich by spreading the burji on a slice of bread. Add shaved cheese and ketchup on top and place another slice of bread on top. You can toast the sandwich if you like.
  • Serve with dal and rice as a side dish.
