Carrot Beetroot Salad






Crunchy, hot and sweet salad.





Ingredients:
Carrots, grated - 1 cup
Beetroot, grated - 1 cup
Tomatoes, finely chopped - 1/2 cup
Radish, grated - 1/4 cup
Green onion, chopped - 1 tbsp
pepper and salt - to taste
Lemon juice - 1 tsp

Raisins - 1 tbsp or more (I prefer a raisin in every spoonful I eat).
Dry cranberries or fresh pomegranate arils(optional)- 1 tbsp

Sugar frosted or plain cornflake cereal - 1/4 cup
Toasted sliced almonds - 1 tsp (Optional)

Method:

  • Mix all the ingredients except cornflakes and almonds
  • Add in cornflakes and almonds just before serving.


Notes:
  • Skip raisins, cranberries, cornflakes, almonds and add onions and green chilies if you like a savory salad as against a hot and sweet salad. Add another tsp of lemon juice.
  • You can also add 2 tbsp of plain yogurt or fruit yogurt to the salad.
  • Another option is to add some fresh orange segments.
