Koftas & Curry



Koftas made from raw jack fruit, raw banana and elephant yam (suran) in spicy curry.









It is difficult to get my family to eat vegetables like raw banana/raw jack fruit and elephant yam. So I thought I should try doing something different with these vegetables. And it worked !!

You can use any vegetables of your choice so long as you can mash them when steamed/boiled. You can also use paneer.

Ingredients for Veg Koftas:
Raw jack fruit, raw banana and yam - cubed, steamed & mashed - 2 cups
Red Onion, chopped - 1/2
Green chilies, chopped - 1
Gram flour (besan)- 1/2 cup (Optional - dry roast for better flavour)
Salt - to taste
Coriander powder - 2 tsp
Chili powder - 1/2 tsp
Dry Methi leaves - 1 tbsp
Ginger, grated - 1/2 tsp
Oil for deep frying

Method for koftas:
  • Mix all the ingredients except oil and make small balls/koftas
  • Heat oil and fry the koftas. Makes about 20 koftas.
  • Serve the koftas as starters or in a gravy of your choice. Below are 2 different gravy recipes - kofta curry (the spicy version) and shahi curry(rich, mild curry)

KOFTA CURRY

Ingredients:
Gram flour(Besan)- 1 tbsp

Spice powders:-
Red chili powder - 1 tsp
Coriander powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Cumin powder - 1/4 tsp
Pepper powder - 1/4 tsp
Cardamoms - 2, powdered
Cloves - 3, powdered
Cinnamon sticks - 1 inch, powdered

Oil - 2 tbsp
bay leaf - 1/2
Onion 1/2 - chopped finely
Ginger 1 tsp - grated
Garlic 1/2 tsp - grated
Yogurt - 1/2 cup

Method:
  • Dry roast gram flour. Add the rest of the spice powders and toss for a minute. Cool and keep aside.
  • Heat oil and add bay leaf.
  • Add onion and saute till pink.
  • Add ginger and garlic and saute till onion turns brown
  • Mix the spice powders with 1/2 cup of water and add to the onions. Saute till oil separates
  • Add salt and yogurt and cook till done
  • Add koftas to the gravy and just before you serve. Reheat the gravy before adding koftas

SHAHI CURRY

Ingredients:
Bay leaf - 1/2
Onion - 1/2 , paste
Ginger paste - 1 tsp
Cinnamon powder - 1/4 tsp
Cardamom powder - 1/8 tsp
Cloves powder - 1/8 tsp
Yogurt - 1 cup
Almond/Cashew paste - 2 tbsp
White pepper powder - 1/4 to 1/2 tsp
Cumin seeds - 1/4 tsp
Salt to taste
Oil - 2 tbsp
Grated Paneer - for garnish

Method:
  • Heat oil. Add bay leaf and cumin seeds.
  • Add onion paste and saute till pink.
  • Add ginger paste and spice powders and saute
  • Add yogurt and cook till oil separates
  • Add salt and Almond/Cashew paste and cook till done
  • Add koftas to the gravy and just before you serve. Reheat the gravy before adding koftas
  • Garnish with grated paneer.
