Refresing lentil salad goes well with any main dish or can be served with some bread.
Ingredients:
Tomatoes - 2
Red Onion - 1/2
Green Chilies - 2
Lime Juice - 1/2 to 1 lime
Salt and pepper powder to taste
Cilantro - few springs
Brown lentils (Whole Masoor) - 1 cup
Olives - few - (Optional)
Olive Oil - 2-3 tbsp
Method:
- Boil the lentils till done in enough water, add some salt and 1 green chili. Allow to cool.

- Cut Tomatoes, Onions, and green chilies lengthwise and add to the salad bowl.
- Add in cooked lentils.
- Add chopped cilantro, olives, salt, pepper powder, oilive oil and some lime juice.
- Let stand for atleast 10 minutes and serve.
