Pasta Upma




Boiled wheat pasta used instead of sooji to make upma.








Ingredients:
2 cups of whole wheat pasta (Penne Rigate or Rotini or any shape you like). I have used Ronzoni Healthy Harvest whole wheat blend pasta.
Onion , chopped 1 cup
Mustard seeds 1/2 tsp
Cumin seeds 1/2 tsp
1 tomato, chopped finely
Vegetable Oil - 2 tbsp
Salt to taste
Cumin powder - 1/8 tsp
Turmeric powder - 1/8 tsp
Red Chili powder - 1/8 tsp
1/2 cup mixed vegetables, chopped and blanched. (optional)
Cilantro - garnish (optional)

Method:


  • Heat water in a stock pot and add salt. Add pasta and boil till Al Dente. Drain and set aside. Save about a cup of the pasta water used to boil the pasta.
  • Heat oil in a pan. Add mustard seeds, cumin seeds and onion. Saute till pink.
  • Add turmeric, chili and cumin powders and mix well. Add tomatoes and salt and cook till oil separates. You can add blanched vegetables at this point.
  • Add cooked pasta and mix well. Add some pasta water, about 1/4 to 1/2 cup and cook till all the water evaporates. Garnish and serve.
