Nice twist to mixed greens salad. This was inspired by a salad I had at a local restaurant in LA.
Ingredients:
Mixed Greens - 1 packet
Balsamic Vinegar - 1 tbsp
Olive Oil - 1 tsp
Tomato, 1 big, sliced
Orange segments - 1 orange (optional)
Low fat Mozzarella cheese - grated, 1/2 cup
Pepper powder - to taste
Salt - to taste
Okra (Bhindi) - 1/2 cup, cut in medium size disks and fried

Method:
- Fry Okra the way you like it. You can make a batter of rice flour and salt/pepper and deep fry. I applied turmeric/red chili powder and salt to okra pieces, rolled them in semolina and shallow fried till crisp.
- In a salad bowl, whisk Balsamic vinegar and olive oil to make salad dressing.
- Add mixed greens, tomatoes, oranges, salt and pepper and toss.
- Sprinkle crispy okra and grated cheese on top and serve.
