Spiced Ketchup - BBQ Sauce





An alternative to Saunth (Sooth) chutney which can be used as BBQ sauce as well. Can also be served along with french fries or burgers instead of ketchup.



Sooth chutney is the tamarind and ginger chutney served with chat.


Ingredients for 1/4 cup of spiced sauce:
Veg. oil - 1 tsp
Cumin powder - 1/4 tsp
Coriander powder - 1/8 tsp
Red chili powder - 2 tsp or to taste
Tomato Ketchup - 1/4 cup
vinegar - 1 tbsp
Water - 2-3 tbsp
Sugarcane Jaggery - grated - 3 tbsp or to taste
Dry ginger powder - 1/4 tsp

Chat masala - 1/4 tsp
Pani puri masala - 1/4 tsp

Method:
  • Heat oil. Add cumin and coriander powder. Ensure that the powders do not get burnt. Lightly toast them.
  • Add red chili powder, water and vinegar. Bring to boil.
  • Add ketchup, dry ginger powder, pani puri masala, chat masala and jaggery. Cook till the sauce thickens back to ketchup consistency.
  • Cool and store.

Multiply the recipe to increase the quantity of sauce.
