Stuffed Bread Pakoda (Fritter)


Apply the spread of your choice in between bread pieces, coat with chickpea flour batter and deep fry. A great way to use leftovers.






Ingredients:
Spread - 1/2 to 1 cup (see below for options)
(Whole wheat or any other) bread slices - 4

Chickpea flour (besan) - 1 cup
Salt to taste
Ajwain (Carom seeds) - 1/2 tsp or less
Red chili powder - to taste

Oil for deep frying

Method:

  • Cut bread slices into 1 inch cubes.
  • Apply the spread on one piece and place another piece over to make a mini sandwich.
  • Heat oil.
  • Make a thick batter using besan, salt, red chili powder & carom seeds. Instead of adding baking soda, add a little bit of the heated oil to the batter to make the pakodas crispy.
  • Dip each mini sandwich into the batter. Ensure that it is properly coated.
  • Add to hot oil and fry till done (just turning light brown).
  • Serve hot. You can serve this with wipped yogurt if the spread used is spicy.
  • Optional - sprinkle Jeeravan and serve.


Options for spread/stuffing:
  • Avocado spread - Add 1 Avocado, 1/8th cup chopped red onion, ground black pepper, chopped cilantro, chopped jalapeno peppers, lime juice and salt to taste to a chopper/blender and make a fine paste.
  • Green Chutney - Blend mint leaves or cilantro, green chilies , lime juice and salt.
  • Tomato Ketchup or store bought plain/spiced tomato sauce.
  • Cheese
  • Mashed potatoes or Dry potato curry (mashed)- boil and mash potatoes. Add spices of your choice.
  • Omelet - cut the same size as the bread.
  • Leftover boneless chicken (dry curry - shred)
